Lofthouse-Style Gingerbread Cookies



One of the best cookies that you can get from a store but homemade. Soft and thick gingerbread spice cookies with a thick glob of maple browned butter cream cheese icing.
Thanksgiving is now over, Black Friday is over and Cyber Monday is here. It's insane that how fast this year has gone by.
Christmas isn't that far away, its exactly a month away when it post this. Since pumpkin spice is over it is now time for Christmas flavors.
In the next month, I will be posting recipes Christmas flavors like today Gingerbread, hot chocolate, egg nog, peppermint chocolate and cinnamon.
These are like the cookies that you can get from the store bakery that almost every likes and melt in your mouth.

Lofthouse-style Gingerbread Cookies


Time:

Chilling- 1 hours
Baking- 13 to 14 minutes

Ingredients

Gingerbread Cookies
3 1/2 cups Unbleached All Purpose Flour
1 cup Unsalted Butter, softened
3/4 cup Dark Brown Sugar
1/4 cup Granulated Sugar
1/3 cup Molasses, lukewarm
1 1/2 Tablespoons Baking Powder

1 Tablespoon Ground Ginger
2 1/2 teaspoons Ground Cinnamon
1/2 teaspoon Ground Clove
3/4 teaspoon Ground Nutmeg
2 large eggs
1/4 cup Sour Cream
1 tablespoon Pure Vanilla Extract
3/4 teaspoon Fine Sea Salt

Maple Browned Butter Cream Cheese Buttercream
3/4 cup (1 1/2 sticks) Unsalted Butter, browned and cooled
5 ounces Cream Cheese
3 1/2 cup Confectioners' Sugar
2 teaspoons Pure Maple Extract or Maple Syrup
1 teaspoon Vanilla Bean Paste or Pure Vanilla Extract
1 to 2 Tablespoons Half and Half or Milk
1/4 teaspoon Fine Sea Salt
Ground Cinnamon, for topping

1. In a medium size bowl, whisk together flour, ginger, cinnamon, clove, nutmeg, salt and baking powder.  Set aside. In a larger bowl, cream together softened butter and sugar for 2 to 3 minutes or until fluffy.
2. Tip: Heat up a little of water in taller cup and place molasses in water for a few minutes. This will help it come out faster.
3. Scrap the sides down. Add in eggs one at time until well incorporated. Pour in molasses and mix until well incorporated.  Add in vanilla.
4. Slowly add in the flour mixture about a 1/2 cup at a time. Beat until flour in mixed in then add in more. Fold in the last of the flour then cover and chill for 30 to 1 hour in the fridge.
5. Preheat oven to 350 degrees and cover two cookie sheets with parchment paper. Scoop out 3 tablespoons worth of chilled cookie dough and bake for 13 to 14 minutes. The cookies maybe soft in the middle, that's okay. Let the cookies cool on the pan for 5 minutes then transfer to a wired rack to cool completely.
6. While the cookies are cooling, brown 3/4 cup butter until it is nutty in fragrance and a light brown color about 7 to 9 minutes. Keep an eye on it because it may burn fast. Do not whisk it just swirl the pan. Take it off the heat for 10 to 15 minutes before transferring to a bowl. Add in maple extract and vanilla extract, if you are using it. Let the butter solidify, this can take up to an hour.
7. Once the butter is solid, add cream cheese and whip it up for 2 to 3 minutes. Add maple syrup and vanilla bean paste, if you are using it. Slowly add in confectioners' sugar a cup at a time. Add milk to make it easier to spread and salt.
8. Smooth a tablespoons worth of buttercream onto the cooled cookies, sprinkle of ground cinnamon and let the cookies set for at least 30 minutes before consuming. Store in a cool area.

  44. So I think if you put maple browned butter cream cheese icing on anything its going to be the bomb! I am not even the biggest Gingerbread fan but these cookies look so soft and with the icing I would probably eat them all.
