Lumps of Coal Cookies




A wicked dark chocolate, fudgy cookie that you should give to all the naughty kids or adults in your life in there stocking that are hung above the chimney with care.
Well you don't have to give these cookies to the naughty ones in your life. You could keep them for yourself and be naughty yourself or bring them to a cookie swap.
I beat they will be a big hit because they are chocolate and who doesn't like chocolate. Now those should be on the naughty list.
These cookies are filled with a lot of chocolate, dark cocoa powder and dark chocolate chips. They have a deep chocolate flavor, an almost Oreo flavor.

I know, I know these cookies aren't the prettiest looking and they may look like they are burnt. Well you will have to be careful because they are so dark.

Lumps of Coal Cookies

Time:
Prep- 20 minutes
Baking- 8 to 9 minutess
Chilling- 2 hours

Ingredients

3 cups Unbleached All Purpose Flour
1 cups Unsalted Butter, softened
3/4 cup Black Cocoa Powder, as dark cocoa powder you can find
2 cups Granulated Cane Sugar
1 Tablespoon Baking Powder
1 Tablespoon Pure Vanilla Extract
2 large eggs
1 large egg yolk
1 teaspoon Fine Sea Salt
12 ounces Dark Chocolate Chips or Semi-Sweet
Course Sugar, for rolling

1. In a medium size bowl, sift together flour, cocoa powder, baking powder and salt. Set aside. In a larger bowl, cream together butter and sugar on medium high speed until light and fluffy. It may take 2 to 3 minutes.
2. Scrap the sides of the bowl then add in vanilla extract and eggs. Beat that until smooth. Scrap the sides.
3. Slowly add in flour mixture to the butter-sugar mixture in three to four intervals. Scrap the sides again and fold in the rest.
4. Press cookie dough into a jellyroll pan, about 15 by 17 with parchment lay down, chill for 1 hour to 1 1/2 hours. Cut cookies into squares, they do not need to be even in size. Chill the dough again for another 30 minutes.
5. Preheat oven to 350 degrees and cover two cookie sheet with parchment paper.
6. Press one side of the cookies into a course sugar or sanding sugar, I used silver.
7. Bake for 8 to 9 minutes, they will be slightly soft to the touch but crackle on the outside. Let the cookies cool on the pan for 5 minutes then transfer to a wired rack to cool complete.
8. Store in a cool place.

  3. I love black cocoa! It only tastes good baked though. My daughter put it into a chocolate shake once by mistake, and it was so terrrible. I couldn't even finish it.
