Blueberry Lime Cookies



Sweet, tangy and soft wild blueberry and lime cookies with a thick sweet and tangy lemon-lime glaze.
 
The flavor of these soft cookies are inspired by a cocktail. Who doesn't like blueberry and lime together?
They are a flavor and texture bomb that are sweet, tangy, soft and creamy.
These cookies are like the ones that you get at the supermarket that are super soft and a slap of buttercream. This cookie doesn't have that much buttercream.

I don't believe I have seen this flavor at the market. I don't know why because they are perfect for the summer.
The cookies are refreshing from the brightness of the blueberries and the lemon-lime glaze.

Blueberry Lime Cookies


Time
Prep- 15 minutes
Chilling- 2 hours
Baking- 15 to 20 minutes

Ingredients

3 1/2 cups Unbleached All Purpose Flour, divided
1 2/3 cups Granulated Cane Sugar
1 cup Unsalted Butter, room temperature
1 1/2 cup Blueberries, fresh or frozen or freeze dried
2 Tablespoons Lime Zest, 4 to 5 Limes
2 Tablespoons Lime Juice, 2 to 3 Limes
1 Tablespoon Lemon Zest, 1/2 Lemon
2 large eggs, room temperature 
3 Tablespoons Sour Cream or Cream Cheese
2 teaspoons Pure Vanilla Extract
1 Tablespoon Baking Powder
1/2 teaspoon Baking Soda
1 teaspoon Fine Sea Salt

Lemon-Lime Glaze
2 1/2 cups Confectioners' Sugar
2 Tablespoons Lime Juice
2 Tablespoons Lemon Juice
2 teaspoons Lime Zest
Pinch of Fine Sea Salt


1. In a large bowl, zest limes into 1 1/2 cup of sugar. Stir together and let it sit for 30 minutes.
2. In a medium bowl, sift together 3 cups flour, baking powder, baking soda and salt.
3. Add butter to lime sugar and cream together until light and fluffy. Scrap the sides of your bowl.
4. Add eggs, sour cream and vanilla extract. Beat until eggs are well incorporated then add in lemon and lime juice. Slowly add in flour mixture into the butter sugar mixture.
5. Toss blueberries into 1/4 cup of flour then fold into batter. Cover and let chill for at least 2 hours.
6. Preheat oven to 325 degrees and line two to three sheets pans with parchment. Scoop two tablespoons worth of batter and roll into the last 1/4 cup of flour.
7. Bake in the oven for 12 to 14 minutes or until lightly golden brown and firm and bouncy to the touch. Let them cool on the pan for 10 minutes then transfer to a wired rack to cool completely.
8. Once the cookies have fully cooled drizzle glaze over the cookies and let set for for 1 to 2 hours. Depending on your kitchen temperature. Can let it set in the freezer. Store in an airtight container.

  1. I love key lime pie so any sweet treat with lime always attracts my attention. Adding blueberries makes this sound irresistible (not to mention the lemon-lime glaze). I have everything in my pantry except for the limes. I'm going to add that to my shopping list.
