Almond Cake with Vanilla Glaze

Mother's Day is coming up really soon, its on May 14th this year for all you daughters, sons, granddaughters and grandsons who are probably going to on the hunt for gift for their Mothers or Grandmothers on Saturday or Sunday. I for once know what I'm giving my mom.

My mom is a simple kind of gal.  She likes functional gifts that she will wear or eat.  I normally get her a pair of slippers, PJs and bake her something.
Her favorite flavor of cake wedding cake or almond flavor anything.  That is one baked item that she requested every year for Mother's Day or her birthday. 

Tools you'll need:
Angelfood Cake Pan or a Bundt Pan
Wire rack for cooling
Aluminum Foil

Cake recipe
3 1/2 cups of Unbleached All Purpose Flour
1 1/2 cups of Sugar
2 teaspoons of Baking Powder
1 teaspoon of Baking Soda
5 Large Eggs
1 1/2 teaspoons of Almond Extract
1 teaspoon of Vanilla Extract (I used homemade)
6 ounces of Slivered Almonds (Can use less)
Pinch of Sea Salt
1/2 cup of Greek yoghurt or regular yoghurt
1 cup of Unsweetened Almondmilk or dairy milk
A dash of Apple Cider Vinegar

Vanilla Glaze Recipe
2 cups of Sifted Powdered Sugar
2 tablespoons of Unsweetened Almondmilk or dairy milk
1/2 teaspoon of Vanilla Extract

Preheat oven to 350 degrees. Grease tube cake pan or Angelfood cake pan or Bundt pan.
Whisk together eggs, oil, almond extract, vanilla extract, sugar, and Greek yoghurt to a pale yellow colour.
Sift flour, baking soda, baking powder and salt then whisk egg mixture with the flour mixture. 
Pour almondmilk and the dash of apple cider vinegar.
Fold in slivered almonds into the cake batter. I used all of the almonds for the batter but you can save an ounce of almonds for the top.
Bake in the preheated oven for 30 minutes uncovered then bake for 10 minutes covered with foil.
While the cake is baking, mix sifted powdered sugar, almondmilk and vanilla together. Set aside.
Check for doneness with a toothpick.  If it comes out clean it is done.  
Let it cool in the pan on a wired rack  for 10 minutes then take out of tube pan  and let it cool completely on a wired rack.
Once cooled pour glaze over cake and enjoy.

    1. You defiantly can change the recipe in which you don't put the slivered almond in there. I'm not a huge fan of the almond nut either.
