Gingerbread Coffee Cake



This isn't your ordinary coffee cake that has cinnamon and a streusel on top, this has two seasonal flavors together happily, Gingerbread and Maple.

Growing up, I was that weird kid that like food that wasn't a normal kid flavor.  A snack food cake company had individual coffee cakes that I would request my mother get me inside of the normal 'kids' cake.


Coffee cake is still one of my favorite cakes because of cinnamon in the cake and the cinnamon streusel topping. This coffee cake has all the seasonal flavors in like ginger, cinnamon, clove, all spice and nutmeg topped with a maple drizzle.

Gingerbread Coffee Cake

Time

Prep: 15 minutes
Baking: 45 minutes to 1 hour
Cooling: At least 1 hour

Ingredients

Cake
2 1/2 cups Unbleached All Purpose Flour
3/4 cup (1 1/2 sticks) Unsalted Butter, softened
1 1/2 cup Dark Brown Sugar, packed
1 1/2 Tablespoons Ground Ginger
1 1/2 teaspoons Ground Cinnamon
1/2 teaspoon Ground Nutmeg
1/4 teaspoon Ground All Spice
1/4 teaspoon Ground Clove
1/4 teaspoon Ground Cardamon
1 1/2 teaspoons Baking Powder
1/2 teaspoon Baking Soda
1 teaspoon Fine Sea Salt
4 whole eggs plus 1 egg yolk
2 Tablespoons Vanilla Extract
1 1/2 cups Sour Cream

Streusel 
1 cup Dark Brown Sugar
1 cup Unbleached All Purpose Flour
1 teaspoon Ground Cinnamon
1/2 teaspoon Ground Ginger
1/2 cup (1 stick) Unsalted Butter, cold and cubed
Tiny Pinch of Sea Salt

Maple Glaze
2 teaspoons Maple Extract or Maple Syrup
1 1/2 cups Confectioners' Sugar
5 to 6 Tablespoons Milk
Tiny Pinch of Sea Salt

1. Preheat oven to 325 degrees. Coat a 9 inch or a 10 inch springform pan with nonstick cooking spray and a little flour.
2. For the topping: In a small bowl, combine brown sugar, flour, cinnamon and tiny pinch of salt. With a pastry blend or your hands work in the cold butter. If the butter is starts to get soften or melt place in refrigerator.
3. For cake: In a medium size bowl, whisk together flour, cinnamon, ginger, nutmeg, all spice, clove, cardamom, baking soda, baking powder and salt. Set aside.  In a large bowl, cream together brown sugar and butter on medium-high speed for 3 to 5 minutes or until light and fluffy.
4. Beat together whole eggs, egg yolk and vanilla extract, add to butter-sugar mixture. Reduce the speed of the mixer and add in the flour mixture in 3 different parts and alternative with sour cream in two different parts. Transfer to prepare pan and smooth out evenly. 
5. Sprinkle on streusel topping evenly on the cake batter and bake on the middle rack for 45 to 1 hour, depending on your oven, until the top is golden brown and a toothpick comes out clean. 
6. Transfer to a wired rack and let cool for 20 minutes, then remove the ring and let it cool completely. For glaze: Whisk together confectioners' sugar, maple extract or syrup, pinch of salt and milk. Spoon a one to two tablespoons a milk at a time until you get a thick glaze. Drizzle glaze over cooled cake and let set for 15 to 20 minutes before serving. Store in a cake dome in a cool place.

  13. My favourite for this time of year has got to be gingerbread, although by the end of Christmas I will probably disagree, the cake looks delicious and I can imagine that group of flavours go really nicely together. I'm hoping to do more baking in 2018.

  15. I was always the same way. I preferred coffee cakes to other snack cakes - oh and honey buns. I was definitely an odd bird. But there is nothing odd about this coffee cake! It looks delicious.

  17. It's probably just simple to omit the coffee, but I just wanted to make sure everything would come out right even if the coffee wasn't added in. I'm not much of a coffee fan , but I'm a huge fan of gingerbread.
