Mardi Gras Cupcakes



Sweet cinnamon and sour cream cupcakes colored purple, green and gold then topped with a yummy  cream cheese buttercream.
Mardi Gras or Fat Tuesday is just around the corner (when I post this) is in full swing. The partying actually started basically the day after New Years' and has stopped. The date changes from year to year but normally is held between February and March.
The first recorded Mardi Gras parade for New Orleans was held back in 1837. All across the Gulf Coast, stretching from Texas to Florida, celebrate Mardi Gras in some way.
If you were wondering why the colors of Mardi Gras is purple, green and gold, the colors have been connected since 1872. Purple means royalty, green means faith and gold means power.

Mardi Gras Cupcakes

Time
Prep: 10 to 15 minutes
Baking: 10 to 12 minutes
Cooling: 1 hour

Ingredients

Cupcakes
3 cups Unbleached All Purpose Flour
1 3/4 cup Granulated Sugar
1 cup Unsalted Butter, softened
1/2 cup Buttermilk 
1 cup Sour Cream
3 large eggs, room temperature
1 teaspoon Fine Sea Salt
1 teaspoon Ground Cinnamon
2 teaspoons Baking Powder
1 teaspoon Baking Soda
1 tablespoon each Purple, Green and Gold (yellow) Gel Food Coloring, I used Wilton

Cream Cheese Buttercream
1 cup Unsalted Butter, softened 
8 ounces Cream Cheese, room temperature
4 to 5 cups Confectioners' Sugar
1 teaspoon Vanilla Extract or Vanilla Bean Paste
Pinch of Sea Salt
Purple, Green and Gold colored sugar, optional

1. For Buttercream: On high speed, cream together butter and cream cheese until light and fluffy, about 5 minutes.  Add vanilla extract or paste. Lower the speed of your mixer and slowly add in confectioners' sugar. Scrap the sides in between each cup. Chill for 30 minutes.
2. For Cupcakes: Preheat oven to 325 degrees and prep cupcake pan with paper cups.
3. Whisk together flour, baking powder, baking soda and salt. Set aside. On high speed, cream together butter and sugar until light and fluffy, about 5 minutes. Add sour cream, mix until fully incorporated then add vanilla extract and cinnamon. Start with a cup of flour mixture then one egg until fully mixed.
4. Divide batter into thirds, about 1 1/2 cups each. Add to each seperate bowls and mix until fully incorporated. Spoon batter into cupcake papers and bake for 10 to 12 minutes or until a toothpick comes clean.
5. Cool cupcakes in the pan for 5 minutes then let cool on a wired rack until fully. Decorate with buttercream and colored sugar. Store in a cool place.
