Chubby Hubby Cookie Cups



Sweet and salty perfection in a bar form with a lot peanut butter, a lot chocolate, a handful pretzels and a touch malted milk.
I made Chubby Hubby cookies last year and it was my first major hit blog post. I was still new to the blogging world and didn't have that many hits, maybe one or two. After I did that post my blog grew majorly.
Chubby Hubby ice cream must be a very popular flavor because it took me forever to find it a local store of mine. Once I had my first taste, I found my new favorite ice cream.
Who wouldn't love it? It has vanilla malt ice cream, peanut-chocolate cover pretzels and a peanut-chocolate swirl.  Its so good.

Chubby Hubby Cookie Cups

Time
Prep: 20 minutes 
Baking: 10 to 15 minutes

Ingredients 

3 1/2 cup Unbleached All Purpose Flour
1 cup (2 sticks) Unsalted Butter, softened
2 large eggs 
1 1/2 cups Dark Brown Sugar 
1 cup Crushed Pretzels
1 cup Smooth Peanut Butter
2 cups Milk Chocolate Chips, can use semi-sweet chocolate
1/2 cup Malted Milk Powder
1 teaspoons Fine Sea Salt
2 teaspoons Baking Powder
1 teaspoon Baking Soda
1 tablespoon Pure Vanilla Extract

Peanut Butter-Chocolate Dipped Pretzels
16 to 24 Mini Pretzels
1/4 cup Milk Chocolate Chips
1/4 cup Peanut Butter Chips
1 tablespoon Coconut Oil

1. Crush pretzels. Set aside. In a medium size bowl, whisk together flour, baking powder, baking soda, fine sea salt and malted milk powder.
2. In a large bowl, cream together butter and sugar for 3 minutes or until light and fluffy.  Scrap the sides of your bowl. Add peanut butter, vanilla extract and eggs. Mix until well incorporated.
3. Take out about a 1/4 cup of the flour mixture and set aside. Slowly add in flour a cup at a time. Toss the 1/4 cup of flour in with the crushed pretzels, peanut butter chips and chocolate chips. Fold into batter.
4. Cover batter and chill for at least 4 hours or overnight.
5. Preheat oven to 350. Lightly spray muffin tins with nonstick cooking spray. Scoop out batter and fill muffin tins. Bake in the oven for 10 to 15 minutes or until a toothpick comes clean. Let cookie cups cool in the muffin tin for 10 minutes then remove then transfer to wired rack.
6. Peanut Butter- Chocolate Dipped Pretzels: in a microwave safe bowl, melt chocolate chips, peanut butter and coconut oil for 1 to 2 minutes in 30 second intervals. Dip pretzels into peanut butter-chocolate and let set for 30 minutes.
7. Place dipped pretzels onto slightly warm cups and let that cool completely.  Store in a airtight container in a cool place.
