Peanut Butter Cookie Cheesecake Bars



 Sweet and salty peanut butter cookie dough bottom, vanilla bean cheesecake then dotted with more cookie dough on top and drizzled with peanut butter chocolate.

I first made this recipe years ago when I started to play with different recipes and combine two different recipes. Peanut butter cookie dough and cheesecake. They are a match made in heaven.
Cheesecake and cookie dough work together so great together. It has creamy cheesecake, peanut butter cookie and a little chocolate. Who wouldn't love that together?
Cookie dough ice cream or anything that was cookie dough. They had a candy that was cookie dough balls dipped in chocolate, they may still have them, and I would get them every time I would go to the movies.

Peanut Butter Cookie Cheesecake Bars

Time
Prep: 20 minutes
Baking: 20 to 25 minutes
Chilling: 3 hours to Overnight


Ingredients

Peanut Butter Cookie Dough
1 1/4 cup Unsalted Butter, browned and cooled
2 1/2 cup Unbleached All Purpose Flour
1 cup Dark Brown Sugar
3/4 cup Creamy Peanut Butter
2 large eggs, room temperature
1 tablespoon Pure Vanilla Extract
3/4 teaspoon Fine Sea Salt

Vanilla Bean Cheesecake Batter
3 (8oz) Cream Cheese Bricks
1/4 cup Sour Cream
1 cup Granulated Cane Sugar
1/4 cup Dark Brown Sugar
3 large eggs, room temperature 
1 egg yolk, room temperature
2 teaspoons Pure Vanilla Extract
1 teaspoon Vanilla Bean Paste or 3 to 4 vanilla beans
1/2 teaspoon Fine Sea Salt

Peanut Butter Chocolate Drizzle
1/4 Cup Chocolate Chip, I used semi-sweet and milk
1/2 Cup Peanut Butter Chips or 1/4 cup Creamy Peanut Butter
2 to 3 Tablespoons Coconut Oil


1. In a medium sauce pan, bring butter to a simmer for about 8 to 10 minutes or until deep golden brown. Take the butter off the heat and let cool for 5 to 10 minutes. 
2. Preheat oven to 325 degrees. Cover a 11 by 17 cookie sheet with parchment paper.
3. Once the butter has cooled, pour it through a mess strainer to get the brown bits from the bottom. Add peanut butter, brown sugar, salt, eggs and vanilla. Whisk together until light, 2 to 3 minutes. Gently fold in flour until just combined. Press 3/4 of the dough into prepared pan and bake for 9 to 11 minutes or until lightly golden brown and set. Let cool on a wired rack completely.
4. In a large bowl, cream together cream cheese, sour cream and granulated sugar for 2 to 3 minutes or until thoroughly combined. Add in vanilla extract, vanilla bean paste, salt, whole eggs and egg yolk. Mix until eggs are just mixed in. Smooth cheesecake batter over cooled cookie crust and drop the last 1/4 of the dough on top.
5. Bake in the oven for 20 to 25 minutes, it maybe slightly jiggly but that's okay. Turn off the oven and let it sit there for 30 minutes.
6. Take out the oven and let cool to room temperature, 1 to 2 hours. Once the cheesecake is cooled down, microwave chocolate, peanut butter and coconut oil. Drizzle peanut butter chocolate over the top and wrap the cheesecake up and chill in the fridge overnight, the longer the better, before consuming.
7. Cut bars up into squares or rectangles and store in the fridge.
