Peanut Butter Easter Candy Cookie Bars



Sweet and salty peanut butter cookie bars with chocolate chips, spring M&Ms and mini Robin eggs. 
You heard right, a sweet and salty Easter cookie bar. I'm using M&Ms and Robin eggs but you can use any Easter candy you like.
For this recipe you can use any type of Easter candy that you have leftover or any of your favorite candy.
Peanut butter cookies has to be on the top of my list of favorite cookie. My number one is chocolate chip (a post of that is coming soon).
Making the cookie had brought me in the mood for the time of the year, Spring. It is totally here and it has already been in the 80's.

Peanut Butter Candy Cookie Bars

Time:
Prep- 15 minutes
Chilling- 1 to 2 hours
Baking- 17 to 20 minutes


Ingredients

1 cup Unsalted Butter, room temperature
2 1/4 cups Unbleached All Purpose Flour
1 cup Granulated Cane Sugar
1/2 cup Dark Brown Sugar, can use light
2 large eggs
3/4 cup Smooth Peanut  Butter, can use any nut butter
2 teaspoons Pure Vanilla Extract
3/4 teaspoon Fine Sea Salt
1/2 teaspoon Baking Soda
1/2 teaspoon Baking Powder
1 1/2 cup Semi-Sweet Chocolate Chips, can use dark or milk
2 cups Spring M&M's
1 cup Mini Robin eggs

1. In a medium size bowl, whisk together flour, salt, baking soda and baking powder. Set aside.
2.  In a large bowl, cream together butter, brown sugar and granulated sugar until light and fluffy, about 5 minutes. Add in vanilla and eggs one at a time and beat until well incorporated. 
3. Add in peanut butter and beat until creamy. Slowly add in flour, save about a 1/2 cup. Toss the chocolate chips and candy into the flour.
4. Fold in the candies and chocolate. Cover with clingwrap and chill for at least 1 hour.
5. Preheat oven to 350 degrees. Cover with parchment and spray a jelly roll pan, 11 by 17. Set aside.
6. Evenly press chilled dough into the prepared pan and bake for 15 to 18 minutes or until lightly golden brown. It may feel a little gooey in the middle but it set once it cools.
7. Let it in the pan for 10 to 15 minutes then carefully transfer to a wired rack to let it cool completely. Cut into squares or bar shapes and store in an airtight container.
