What's the best part of a baked potato? Is it the bacon, cheddar cheese, sour cream, buttery goodness or the potato? How about all of the above? Mine would be the bacon and cheddar cheese.
What you need:
2 Nonstick Loaf Pans
Large Bowl
Aluminum Foil
Cheese Grater
Wired Rack
Yield: 2 Loaves
Time:~4 to 5 hours
Recipe
1 1/2 cups of Mashed Potato, it took me 2 to 3 small potatoes
3 cups of Unbleached Bread Flour
4 cups of Unbleached All Purpose Flour plus some for dusting and coating pan
2 1/4 to 2 1/2 cups of Warm Water
1 tablespoon+1 teaspoon of Dry Active Yeast
8 ounce block of Extra Sharp Cheddar Cheese, about 3 cups of grated cheese
12 slices of Thick Cut Bacon
1/2 cup of Unsalted Butter, melted
1 tablespoon of Sea Salt or to taste, divided
1 tablespoon of Honey or Sugar
2 1/2 teaspoons of Black Pepper or to taste, divided
1 1/2 cups of Sour Cream, divided
1 to 2 teaspoons of Unsweetened Almondmilk or regular milk
Chives (optional)
*First, boil or bake potatoes for 30 to 45 minutes, or until soft in the middle. If baking the potatoes coat with a little of butter and leave the skin on, if boiling peel the potatoes.
*Stick a fork or knife to check for doneness. If it goes through easy they are done, let the potatoes cool for maybe 10 to 15 minutes. Mash the potatoes until completely smoothed. Mix in a 1 cup of sour cream, 1 teaspoon of milk, 1/2 teaspoon of sea salt and 1/2 teaspoon of black pepper. I made my the night before and let sit in the refrigerator.
*Cut bacon into 1 inch pieces then fry it. It maybe take up to 15 minutes for all the bacon to cook. Once its fully cooked with a slotted spoon, scoop out bacon and place on a paper towel to completely cool.
*Place block of cheddar cheese into freezer and let it sit in there for at least 30 minutes. This will help it not crumble or melt with the heat of your hands while you grate it.
*Mix together yeast, honey, and 2 cups of warm water. Let it bloom for about 10 to 15 minutes.
*While the yeast is blooming, combine all purpose flour, bread flour, 2 teaspoons of black pepper, 2 teaspoons of sea salt. Set aside.
*Once the yeast has fully bloom pour into flour and add 1/2 cup sour cream then mix well. It will still be really tacky, that is okay. If it's too dry add maybe a 1/4 cup of water at a time. Let it sit for 20 minutes.
*Fold in cheddar cheese and bacon with a spoon knead dough for 5 minutes then add 1/2 cup of melted butter. Mix it well. Cover bowl with plastic wrap, I covered mine with an unused shower cap. Let it proof for 2 hours or until double in size.
*Punch down dough. Coat loaf pans with butter and flour. Cut dough in half and place into loaf pans. Let it proof in pans for 30 minutes.
*Preheat oven to 400 degrees. Cover the bread with the rest of the cheese, bacon and a little of black pepper. Bake for 15 minutes then lower the temperature to 350 degrees loosely cover it with foil then back for 35 minutes. Rotate the loaves then back for another 10 to 15 minutes.
*Let it cool in the pan for 10 minutes on a wired rack then tip over on the same wired rack and let it cool completely.
Enjoy it by itself or use for a sandwich or dip it in some tomato soup.
I love store bought potato bread. It has a hint of potato but I could never find any variety of flavors of potato bread.
I've made loaded bacon bread and it is so good but I was raking my brain in what would make it better, potatoes.

Potato bread is something new to me..sounds interesting.. definitely will give a try
