Whole Wheat Pizza Crust


Like I said in a previous post, I love pizza. I can eat pizza for every meal of the day.  Well I used to be able to eat every meal and have no problem but since I've gotten older I can't eat tomato sauce for two meals back to back and not have acid reflux :(
 I needed a pizza crust that was a little healthier so I decided to use whole wheat flour and it just as delicious as regular crust.  You really can't tell the difference. I had my neice and nephews over and they ate it all up.

I used this crust to make a Sicilian Style pizza that is stretch out on a cookie sheet and cut into a square or a rectangle.  I believe you get some pizza out of this style.

Tools you'll need:
Plastic Wrap
2 Cookie Sheets
Large Plastic Container
Large Bowl
Pastry Brush

Yields: 2 Sicilian Style Pizza

Recipe
4 cups of Whole Wheat Flour, I used King Arthur's Flour
2 cups of Unbleached Bread Flour,I used King Arthur's Flour
2 1/4 cups of Warm Water
1 Tablespoon of Dry Active Yeast
2 Tablespoons of Sugar
2 Teaspoons of Sea Salt
4 to 5 Tablespoons of Olive Oil
3 Tablespoons of Corn Meal

Combine warm water, sugar, yeast and 3 tablespoons of Olive Oil.
While the yeast is blooming combine flour and salt.
Once the yeast has fully bloomed add to flour and salt.
Mix well. With a spoon fold dough into it for 5 minutes. I spun the bowl with every fold.
The dough will be tacky, sprinkle some flour and cover with some plastic wrap or an elastic cover. 
Let it double in size.
Divide in half and sprinkle a little flour before lightly kneading and rolling into a tight ball using a roll and tuck motion.Wrap dough in plastic wrap and place in gallon ziplock bag or a large container. Place in the refrigerator overnight.
Take dough out of refrigerator 3 to 4 hours before baking. Knead dough into itself and tucking it into a tight ball. Place into a large container and covered letting them double in size again.

To bake
Brush a tablespoon of olive oil on each cookie sheet then sprinkle corn meal. Press dough out on the cookie sheet trying to reach all the corners, if the dough tear pinch the dough together. Once you have the dough pressed out let it sit for 10 to 15 minutes.
Preheat oven to 400 degrees. Spread of pizza sauce, sprinkle on cheese and add your favorite topping, I used whole milk mozzarella cheese, parmesan cheese and uncured pepperoni.
Bake for 15 minutes or until cheese is melted and brown and bubbly, rotating after 10 minutes. Let it cool for 5 to 10 minutes before cutting.

    1. I hope they enjoy it. I had my niece and nephews over and they ate the pizza. They couldn't tell the difference in taste from Whole wheat and white flour.

  3. This looks great. I always want to make my own crust, but I just don't have the patience. I just grab some Naan bread and thow them on the grill. Saving this for later because I'm sure one day I will try it! lol

  4. This looks yummy! I used to make pizza and calzones with my kids when they were younger. We incorporated that as part of our "home economics" for our homeschooling schedule. Now I try to stay away from gluten, but I haven't yet found a really good gluten-free flour that tastes good.

  5. Your pizza looks so yummy. I admit, I'm more of a frozen pizza person just because I'm always in a rush to make dinner. But I'll have to try this crust recipe on a weekend when I have more time. Thanks!

  8. Love this pizza making. Thanks for sharing. I just love chicken cheese pizza, can you please share a Chicken cheese pizza recipe? It will be great! As I am in pizza delivering system for a couple of years, I can say my customers always eager to receive the hot and fresh pizza.
