Spicy Chicken Spaghetti


This was requested for me to post the recipe from my Facebook page when I post a picture of it last week.
Growing up, my mom make Chicken Spaghetti for dinner on occasions but it was different.  She would boil the chicken with celery and some spices, the sauce would made from processed American Cheese and I think she would use thick pasta.
I think Chicken Spaghetti might be a Southern thing because I've met people throughout the years I've heard and tasted different versions of it but I'm not 100% certain. But they all had chicken, a cheese sauce instead of red, spaghetti pasta and is a one-pot dish.
The best way I can describe Chicken Spaghetti is that its like Chicken Alfredo but it doesn't have a strong garlic flavor, the use of spaghetti pasta instead thick fettuccine pasta and not always a thick sauce. But is still as delicious.

Recipe
For Spicy Chicken
1 lb (16 oz)  Chicken Breast Tenderloins, can use anytime of chicken
1 to 2 teaspoons Canola Oil
1 Tablespoon Sweet Paprika
1 teaspoon Ground Chipotle Pepper or Cayenne Pepper
2 teaspoons Sea Salt
1 teaspoon Black Pepper, fresh cracked is best

For Spaghetti
3 1/4 cups Unsweetened Unflavored Almondmilk, heated (see notes below)
6 ounces (Half package) Thin Spaghetti, broken in half
1 cup Italian Blend Cheese, can use mozzarella (see notes below)
1/2 cup Parmesan Cheese (see notes below)
1 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
1/2 teaspoons Turmeric, optional
1 to 1 1/2 teaspoons Sea Salt, to taste
1 teaspoon Black Pepper, fresh cracked is best
1 1/2 teaspoons Sweet Paprika
1 teaspoon Smoked Paprika, optional
1/2 teaspoon Ground Chipotle Pepper, optional, can also use Cayenne Pepper

Notes:
*I used Unsweetened Unflavored Almondmilk because its not as heavy as half and half or regular milk and I try to limit my dairy intake. When making can always use regular milk.
*I used dairy cheese because the non-dairy cheese that I have tried before I didn't like that much and where I live there's really only one store that carries it.

1.)Let's get started with the chicken, preheat skillet with some oil. Start on a medium heat or if using an electric pan 350 degrees.
2.)While the pan is heating sprinkle 1 1/2 teaspoons of Sweet Paprika, 1 teaspoon of sea salt and 1/2 teaspoon of Black Pepper on one side of the chicken.
3.)One sign that the skillet is hot enough the oil with start to sizzle or dance around.
4.)Place chicken seasoned side down into the pan. Let it blackened on each side for 5 minutes (if using thicker cuts of chicken it will take longer to blacken up to 15 minutes). Sprinkle another 1 1/2 teaspoons Sweet Paprika, 1 teaspoon Sea Salt and 1/2 teaspoon Black Pepper. Turn the chicken over after 5 minutes. Let the other side blacken for another 5 minutes then cover pan for 10 to 15 minutes for the chicken to fully cook.
5.)While the chicken is cooking heat up milk in the microwave for 3 to 4 minutes, warmed milk will create a smoother sauce while a cold milk will have a sauce that will seize up.
6.)Check the middle of the chicken for doneness. Remove chicken from pan.
7.)Add 3 cups of the heat milk to the pan and bring the a low boil.
8.) Add cheese a 1/2 cup at a time, stirring it until it has melted into the milk. Let the boil for 5 minutes or until the cheese is completely incorporated.
9.) Add Garlic powder, Onion powder, Turmeric, Sea Salt, Black Pepper, Sweet Paprika, Smoked Paprika (if using) and Chipotle pepper or Cayenne Pepper. Break thin spaghetti pasta in half into the pan. Bring it to a boil for 8 to 10 minutes. You may need to add a little of the milk as the pasta is cooking.
10.) Test the pasta to see if it is al denta, turn off the heat and let it sit for 5 to 10 minutes. Can add a little more cheese on the top if you like.

  8. I'm not a fan of cream-based pasta as I find it too rich and/or too heavy. I like that you used almond milk, plus it's spicy! I'll definitely try this recipe for dinner.
