Here original home fries use russet potatoes but I had yellow potatoes left over from making gnocchi last week so I decided to use them. The golden potatoes have a little more flavor and slightly sweeter than russets.
You only need 4 ingredients: potatoes, oil, salt and pepper. You also sprinkle on taco seasoning, chipotle pepper with a little salt mixture, creole seasonings or even dry barbecue seasoning.
They have a crispy outside with a tender inside.

Time: ~25 minutes
Recipe
4 to 5 Medium Size Gold PotatoesAbout 3 cups Canola Oil, can use any oil that has a high smoke point (it depends on the size of the skillet or pan you use in the amount of oil you will need)
Sea Salt, to taste
Pepper, to taste
1.) In a deep skillet, heat up oil to 375 degrees. It may take 5 to 10 minutes to heat up.
2.) While the oil heats up, rinse and cut potatoes into 1/4 inch slices.
3.) The oil will start to bubble the oil is ready to cook. Place potatoes into pan, do not place potatoes on top of eat other.
4.) Place paper towels on the bottom of the cookie sheet then place the wired rack on top.
4.) Let the potatoes fry on one side for 5 minutes then flip to the other side for another 5 minutes. After they have cooked 10 minutes on each side continue to rotate the potatoes for another 5 minutes.
Yum! I think my own mom makes something similar to these, except I think she uses garlic salt and butter. :)

ReplyDeleteI've never deep-fried sliced potatoes, although my mother used to make home "fries" from sliced potatoes in the oven. They're very good! My husband learned to make traditional Montreal-style French fries from his father. He insists on thick-cut potato sticks and soaks them in water prior to frying. They are so decadent, especially for making poutine with tons of gooey curd cheese!
