Everything that you love in a oven baked lasagna but in soup form. The tomato, pasta, Italian meat and cheese. This might even be better.
I've been making this soup for my family for years and they love it, they request it once September rolls around and make it at least twice a month during Autumn and Winter. Even my niece and nephews loves this soup.
I make this in the slow cooker because I can throw in all the ingredients, turn it on and go on with my day.

Lasagna Soup

Slow Cooker or Large Pot
Slow Cooker Liners
Time
Prep: 10 Minutes
Cooking: 6 to 7 hours
Ingredients
1 lb Ground Italian Seasoned Turkey Meat or Italian Sausage or Vegetarian Crumble
4 cups Tomato Sauce
3 cups Lower Sodium Chicken Broth
1 tablespoon + 1 1/2 teaspoons Granulated Garlic
1 tablespoon + 1 1/2 teaspoons Granulated Onion
3 Whole Bay Leaves
2 tablespoons Italian Seasoning
2 teaspoons Dried Parsley
2 teaspoons Dried Oregano
1 teaspoon Red Chili Flakes, optional
2 teaspoons Sea Salt
2 teaspoons Black Pepper, fresh ground is best
2 cups Dried Pasta, using small pasta is best
Mozzarella Cheese
Parmesan Cheese
Slow Cooker Recipe
1.) Place slow cooker liner. Add all ingredients but dried pasta. Turn slow cooker on low and cook soup for 6 to 7 hours. Stir occasional.
2.) Add dried pasta 30 minutes before serving. Let it cool slightly before serving with cheese.
Stove Top
1.) In a large pot, brown Italian meat do not drain the grease. Add the rest of the ingredients but the pasta to the pot and slowly cook it on medium low for 3 to 4 hours. Stir often making sure it does scorch on the bottom.
2.) Add dried pasta 30 to 45 minutes before serving. Let it cool slightly before serving with cheese.
To reheat, you may need to add a little chicken broth or water to the soup.
Jus the other day we had lasagna, and I remember having seen a recipe. After seen how easy it is to make, I will be trying my hand at making lasagna soup.

I can't wait to try this recipe because it's screams fall and being that it's my favorite season I like to try hearty, comfort meals and this is one!

ReplyDeleteI just had lasagna last week with my family! For Italians it's such a staple (or any post dish really) in our home. I think this is a good idea. It's easier for kids to eat rather than having to go through layers of meat and pasta.

ReplyDeleteNever did I thought that Lasagna as a soup, I'm not a super fan of pastas, but I do appreciate Italian cuisine and I love it. lasagna would be the least that I would eat however "lasagna soup" with your recipe that changes a lot. I would maybe take out mozarella and just parmesan, sorry I'm really difficult eater in terms of "cheeses"
