Pumpkin Spice Sugar Cookies



Sugar, pumpkin spice, Halloween and everything nice. Need I say anything more, I don't think so.

I made vanilla bean sugar cookies months ago that were a totally hit for my family and since it tis the season for everything Pumpkin Spice I wanted to do a twist on a simple sugar cookie.

Right now that is all I need, I need my pumpkin spice coffee, Halloween and I am good to go. This is my first Halloween looking recipe for the month and I have many more.

Pumpkin Spice Sugar Cookies

Cookie Cutters
Decorations, if desired

Time

Prep: 15 minutes
Baking: 10 minutes

Ingredients

6 cups Unbleached All Purpose Flour plus about 1 cup for rolling
1 1/2 cups (3 sticks) Unsalted Butter, room temperature
1 1/2 cups Sugar, I used unrefined
3/4 cup Pumpkin Butter or Pumpkin Puree (make sure its pure pumpkin not pie filling)
2 Tablespoons Pumpkin Spice, I used Pumpkin Spice Extract
2 teaspoons Vanilla Extract
1 Tablespoon Baking Powder
1 teaspoon Sea Salt
1 egg, room temperature 

1.) Sift 6 cups all purpose flour, baking powder and salt. Set aside.
2.) Cream together butter and sugar together for 5 minutes or until light and fluffy. Bump up the speed for 1 minute. Add pumpkin spice, pumpkin butter or puree and vanilla. Mix that until well combined.
3.) Add egg to the butter/sugar mixture. 
4.) At one cup at a time, slowly add in flour mixture. Mix then add another cup of flour until all flour in gone. Cover and chill for 1 to 2 hours.
5.) Cover two cookie sheet with parchment. 
6.) Divide dough in half.
7.) Cut two sheets of wax paper. Place one piece of wax paper on a cool surface then flour well. Place dough on wax paper sheet then place other piece wax paper on top.  Dust a little more flour. Gently roll dough out to a 1/4 inch thick.
8.) Gently press down with cookie cutters and twist for easy pick up. Place on parchment and continue. Place cut out cookies in the fridge for 30 minutes.
9.) Preheat oven to 325 degrees. Bake cookies for 10 to 12 minutes or until lightly golden brown, rotating after 5 minutes. The cookies will be soft. Place on a cooling rack let cool on pan for 5 minutes then slide off pan to cool completely if decorating,

    My favorite part of fall are the decorations. In Florida it never really feels like fall outside so I think a lot of us overcompensate with decorations lol. And I love it! Oh and the smells. Everything is fall scented and I LOVE IT.

  31. I LOVE a good, thick sugar cookie... and these look perfect! My mom always made cookie cutter sugar cookies with us for both Halloween and Christmas. I inherited all the cutters and made them with my children too. I love that this recipe includes pumpkin puree. I've never tried that before. I definitely need to try this. ;-)

  38. Yum! Pumpkin anything this time of the year is good (and why not all year?) I wonder how these would come out using gluten-free flour. Might be worth trying! I don't celebrate Halloween, but these would be great in pumpkin shapes for a harvest party or as part of the dessert trays after Thanksgiving.
