Smoky uncured bacon and sharp cheddar cheese with black pepper in a savory muffin.
I am a huge muffin fan but I've only seen them in sweet version and never savory.
Bacon and cheddar together, especially extra sharp cheddar, its one of my favorite savory combo. Extra sharp cheddar just has that extra bite that helps with the smokiness of the bacon.
Makes these muffins for a on-the-go breakfast or lunch. Even make these in a smaller version for afternoon tea or a snack.

Bacon and Cheddar Muffins
TimePrep: 25 minutes
Baking: 20 to 25 minutes
Yields: 14 Jumbo Size or 16 Regular Size
Ingredients
3 1/2 cups Unbleached All Purpose Flour1 lb Uncured Bacon, chopped and cooled; can use turkey
3 cups Sharp Cheddar Cheese, can use medium cheddar
3 tablespoons Dark Brown Sugar
3 tablespoons Bacon Drippings
1 1/2 Tablespoons Baking Powder
4 large eggs, room temperature
1 1/2 cup Warm Milk
1/2 teaspoon Fine Sea Salt
1 teaspoon Ground Black Pepper, to taste
1. Chopped or cut bacon using kitchen scissors. Saute bacon. Once bacon is fully cooked, but not too crispy transfer bacon on a paper towel and cool. Scoop out bacon grease and let cool slightly. Crumble bacon once it cools fully.
2. Freeze block of cheddar cheese for about 1 hour, this will help with grating.
3. In a large bowl, whisk together flour, brown sugar, sea salt and black pepper. Set aside. Heat up milk just enough to get the chill out of it, about 1 minutes in the microwave. Add the milk, eggs and drippings to the flour mixture. Stir ingredients until just combined. Fold in the bacon and shredded cheddar.
4. Preheat oven to 350 degrees. Line muffin tin with liners or grease with nonstick cooking spray. Scoop out batter to 3/4 way full then bake for 20 to 25 minutes for jumbo and 15 to 20 minutes for regular or until a toothpick comes clean. If the tops start to brown too fast cover with foil for the rest of the time.
5. Let cool for 10 minutes in the muffin tin then transfer to a wired rack. Either consume warm or let cool completely and store plastic container. To warm up, microwave for about 30 seconds.

These cheddar and bacon muffins sound delicious. I'm hungry and they look like I want one right now. These would work great for breakfast yes but, I could see having them with thick soups or chili as well.

ReplyDeleteI agree with you! Extra sharp cheddar is the best! These sort of remind me of the little muffins they serve at Jim ‘N Nicks BBQ. Except these are better because they also have BACON!

ReplyDeleteI actually prefer savoury muffins (like corn muffins) to most of the sweet ones. I also like to use muffin tins to make a sort of crustless mini quiche with sausage, cheese, and veggies. This bacon and cheddar muffin recipe looks very tasty!
