Browned Butter Maple Coffee Cake



Browned Butter Maple Coffee Cake, that is a mouth full but these are a mouth full of flavor in every bite with a browned butter maple coffee cake, cinnamon crumbs and brown sugar cream cheese glaze.
I've always loved coffee cake. I remember growing up a famous snack cake company had mini coffee cakes and I was the strange little kid that actually loved coffee cake.
The first day of Autumn was a few days ago and it kind of feels like it when I step outside of my home. My mom best describes the humidity as a wall and today was the first day it wasn't like that.
With the coffee cake I will be using maple extract. I use real maple extract not the imitation maple extract. I've used the extract to make my own syrup taste like maple extract from Vermont and it is least expensive.
This coffee cake has a great combination of flavor with browned butter, maple, cinnamon and brown sugar cream cheese glaze. YUM!

Browned Butter Maple Coffee Cake

Time
Prep- 20 minutes
Baking-40 to 45 minutes

Ingredients  

Browned Butter Maple Coffee Cake
1 1/2 cups (3 sticks) Unsalted Butter, melted
3 cups Unbleached All Purpose Flour
1/2 cup Granulated Cane Sugar
3/4 cup Dark Brown Sugar
1 1/2 Tablespoons Pure Maple Extract
3/4 cup Warm Milk
4 large eggs
1 1/2 cup Sour Cream 
2 teaspoons Baking Powder
1 teaspoon Baking Soda
1 teaspoon Fine Sea Salt 

Streusel Topping 
1 cups Dark Brown Sugar
2/3 cup Unbleached All Purpose Flour
1/2 cup Unsalted Butter, frozen
2 teaspoons Ground Cinnamon
1/2 teaspoon Ground Nutmeg
1/4 teaspoon Fine Sea Salt

Browned Butter Cream Cheese Glaze
3/4 cup (1 1/2 sticks) Unsalted Butter
4 ounces Cream Cheese
3 cups Confectioners' Sugar 
4 Tablespoon Tablespoons Milk
1 teaspoon Pure Vanilla Extract
Pinch of Fine Sea Salt

1. In a medium sauce pan, simmer 3 stick of butter on a medium high heat for 10 to 12 minutes or until nutty in fragrance and light brown in color. Stir and swirl the pan often. Take it off the heat and let it cool for 20 minutes.
2. Preheat oven to 350 degrees and grease 11 by 15 pan, or any size pan you are using.
3. In a medium size bowl, combine dark brown sugar, flour, cinnamon, clove and salt. Add cold butter and work the butter into the brown sugar and flour until butter is coated thoroughly. Place in the fridge or freezer until you use it.
4. In a large bowl, combine 3 cups of flour, baking powder, baking soda, salt, brown sugar and granulated sugar. Set aside. In a separate bowl whisk together cooled browned butter, warmed milk, eggs and sour cream. Make sure the the eggs and sour cream are slightly room temperature.
5. Add browned butter mixture to the dry ingredients. Mix together to just combined. 
6. Add 1/2 the batter to the pan then sprinkle 1/3 of the streusel topping.  Smooth of the rest of batter and sprinkle of the last of the topping. 
7. Bake in oven for 40 to 45 minutes or until a toothpick comes clean. Transfer to a wired rack and let cool. 
8. While the cake is cooling, in a medium sauce pan bring 3/4 cup of butter to a high simmer for 7 to 9 minutes or until nutty in fragrance and light brown in color. Add in vanilla. Remove from the heat and let cool for at least 15 minutes then pour through a mesh strainer to get the brown bits. Whisk in cream cheese until smooth then slowly add in confectioners' sugar until the lumps are gone.  Add in milk to thin it out. I used a ziplock bag to drizzle on top.
9. Once the cake has fully cooled drizzle glaze over and let it set for at least 30 minutes. Make sure to keep covered so it doesn't dry out.
