Maple Pumpkin Pie Cobbler



A Thanksgiving classic, Pumpkin Pie, but it doesn't have a crust. It has pumpkin, all the warm pumpkin spices, sweet maple topped a crunchy struesal topping with oats and pecans and whipped cream.
I was inspired by a pumpkin pie that I found at the store. It was called a crisp but I've seen it called a cobbler, all I care is that it is one my plate.
Thanksgiving is just around the corner, there's tons of sales which I am ranking in. I see people buying all of the Thanksgiving they think they will need.

But I am sure people will be running to the store before they close on next Wednesday. My family basically ready for the feast.
If you like pumpkin pie but don't like the crust and only the filling, you will like this. I'm more of a filling myself.

Maple Pumpkin Pie Cobbler

Time-
Prep: 15 minutes
Baking: 50 to 55 minutes
Chilling: 20 to 25 minutes

Ingredients

Pumpkin Filling
3 cups Pumpkin Puree, not pumpkin pie filling
1 1/2 cups Granulated Cane Sugar
5 large eggs
3/4 cup warm milk
2 1/2 teaspoons Ground Cinnamon
2 teaspoons Ground Ginger
1 teaspoon Ground Nutmeg
1/2 teaspoon Ground All Spice
1/4 teaspoon Ground Clove
1 Tablespoon Pure Vanilla Extract
2 teaspoons Pure Maple Extract or Maple Syrup
1 teaspoon Fine Sea Salt

Crumble Topping
3/4 cup Rolled Oats
1 cup Unbleached All Purpose Flour
2/3 cup Dark Brown Sugar
2 teaspoons Ground Cinnamon
3/4 cup (1 1/2 sticks) Unsalted Butter, melted
1/2 teaspoon Fine Sea Salt
1 cup Chopped Pecan, optional
Whipped Cream or Ice Cream, for serving 

1. Preheat oven to 375 degrees and grease a 9 by 13 casserole dish.
2. In a large bowl, beat together eggs and sugar until well blended. Add in pumpkin puree, vanilla, pumpkin spice and salt. Slowly add in the warm milk, a little at a time. Mix until the mixture is smooth.  
3. Pour pumpkin mixture into prepared pan. Set aside
4. Crumble topping: In a medium size bowl, whisk together flour, oats, brown sugar, cinnamon and salt. Add in melted butter and mix until it is a crumbly texture.
5. Add crumble topping on top of the pumpkin mixture. Cover the top with a piece of foil and bake for 30 minutes. Remove foil and bake for another 20 to 25 minutes or until a toothpick comes clean. It will have a slight jiggle to it.
6. Take the cobbler out of the oven and let it cool for 30 to 35 minutes on a wired rack then serve with ice cream or whipped cream.
7. If making a head of time, bake completely covered for 30 minutes. Remove and let it cool completely, once cooled cover with a secured lid and place in fridge. When warming it up, take it out for 10 to 15 minutes then bake for 10 minutes covered then 10 to 15 uncovered.

  5. I love how you've staged everything, with the pumpkin and cinnamon sticks! What would you recommend to substitute for the oats if someone has an oat intolerance?

    1. You could probably take out the oats and add in pecans or any type of nuts that you would like to give it the crunch and double the flour.

  9. Gosh - we're already in mid-November and I haven't had pumpkin ANYTHING yet! And I love all the pumpkin treats. This looks amazing. And I usually can't do most desserts because I have a gluten intolerance. But as long as I use gluten-free oats, yours is just fine - yay!

  30. I love how delicious and beautiful this cobbler looks, and that it has lots of filling as well! Unfortunately, I only remember having had apple cobbler in my life--I have never tried pumpkin cobbler, but I am sure I would like it too, since I like pumpkin pie.
