Chubby Hubby Granola Bars




Sweet and salty chewy granola bars with peanut butter, salted pretzels, oats, rice cereal, milk chocolate chip, peanut butter chips, malted milk powder and drizzle with even more peanut butter and chocolate.
I can't believe that this is my last post of 2018 and it is my 3rd blogiversary.  It is insane that I have been posting for 3 years.
Since the New Year is upon us, I wanted to do a health-ish recipe. It has oats and peanut butter in it so it makes it healthy. Right?
I've done Chubby Hubby flavor recipes before, cookies and cups,  and I had to do it again. I love the flavors of peanut butter, chocolate, pretzels and the malty flavor.
This year was the first time I have ever had the ice cream with its name sake.  It was a kind of hard to find in my area so I am happy to find it and I feel in love with it. 

These are the perfect sweet and salty treat for kids and adults.

Chubby Hubby Granola Bars


Time:
Prep- 10 to 15 minutes
Chilling- 1 to 1 1/2 hours


Ingredients

4 1/2 cups Rolled Oats
1 cup Puffed Rice Cereal
2 cups Lightly Crushed Pretzels
3/4 cup (1 1/2 sticks) Unsalted Butter, I'm not sure if vegan butter would work
3/4 cup Dark Brown Sugar
1/2 cup Honey or Maple Syrup
1/2 cup Creamy Peanut Butter
1 Tablespoon Pure Vanilla Extract
2 1/2 cups Milk Chocolate or Semi-Sweet Chocolate Chips, divided
1 cup Peanut Butter Chips, divided
1/4 cup Malted Milk Powder
1/2 teaspoon Fine Sea Salt, optional if it is too sweet

1. In a large bowl, combine oats, puffed rice cereal, and malted milk powder. Set aside. Grease and parchment paper a jelly roll pan.
2. In a medium sauce pot, bring butter, sugar, honey and peanut butter to a low boil for 2 minutes.  Remove from heat and add in the vanilla.
3. Pour peanut butter-sugar mixture over the out and oat-cereal mixture. Fold gently until it is all well coated. Fold in pretzels then add in 1 1/2 cups of the chocolate chip and a 1/4 cup of peanut butter chips. Fold in then spread into prepared pan. Press in flat with a rolling pin or lay piece of parchment and press with hands. Sprinkle the last half of the crushed pretzels and 1/2 cup chocolate chips. Gently press in.
4. Cover and chill for  at least 1 to 1 1/2 hours or until firm and completely cooled. Cut into bars
5. Melt the rest of the peanut butter chips then drizzle on top of the bars. Let that set for at least 30 minutes. Store in a airtight container in a cool area.

  4. These look insanely delicious! You know I love to follow your recipes even though I'm vegan, and I can normally easily switch ingredients for vegan alternatives... But this time, what could I switch for the milk powder? Any help would be mega! šŸ’š

  12. So These Chubby Hubby granola Bars look amazeballs! I particularly love the Chocolate and Peanut butter combo. But what I find totally unique and truly Genius is the addition of the Pretzel bits. I love pretzels but never would have thought about adding them to a granola bar. This is like the ultimate superbowl snack pack but in Granola Bar form!

  21. Oh my goodness I'm in love!! I would have never thought about making such a yummy treat until I saw this post. Definitely will have to save this for my next party! I'm thinking of swapping out the peanut butter for nutella.. what do you think? ( I have a peanut allergy! )

  29. i have made granola bars a couple of times with different recipes but wanted to try something new and this sounds like one the whole family will love so will try this out... on a side note, i have so many recipes i want to try out here that if i really do, i will get to be chubby myself..
