Gingerbread Mocha Sandwich Cookies





When you need a little pep in your step to do all of your holiday shopping, these cookies are for you. A gingerbread sandwich cookie filled with all the yummy spices and chocolate ganache with a hint of coffee .

This is the third recipe cookie recipes for this Christmas season perfect for a cookie swap.  I'm creating a page all a lot of the recipes that I have made.
I can't believe that Christmas isn't that far away, only nine days away when I post this. Where has the time gone?

Looking back on the recipes that I have made this year, I haven't made anything that has coffee in it. I don't know how I haven't done so.
I thrive on coffee every day of my life, no one can talk to me if I haven't had it.
These cookies is inspired by a two lattes that you can get at a popular coffeehouse chain. The mocha latte you can get year round and the gingerbread around the holidays.
Put them together and you have an amazing combination of the spices of the gingerbread and creaminess of the chocolate.

Gingerbread Mocha Sandwich Cookies

Time:
Prep- 20 minutes
Chilling- 2 hours
Baking- 11 to 13 minutes

Ingredients

Gingerbread Cookies
1 1/2 cups (3 sticks) Unsalted Butter, room temperature
4 cups Unbleached All Purpose Flour
2 cups Granulated Cane Sugar
1/2 cup Molasses, unsulfered and not blackstrap
2 large eggs
2 teaspoons Baking Soda
1 teaspoon Baking Powder
2 Tablespoons Ground Ginger
2 1/2 teaspoons Ground Cinnamon
1 teaspoon Ground Nutmeg
3/4 teaspoons Ground Clove
3/4 teaspoon Fine Sea Salt 
2 teaspoons Pure Vanilla Extract
3/4 cup Course Sugar, for rolling

Chocolate Ganache
2 cups Milk Chocolate Chips or Semi Sweet
1 1/2 cups Heavy Whipping Cream
1 Tablespoon Ground Instant Coffee or Espresso Powder


1. Chocolate Ganache: In a medium sauce pan bring the heavy cream and coffee to a simmer not a boil. Strain the hot cream over the chocolate chips. Let that sit for 2 to 3 minutes then whisk until thick. Let it sit out on a counter for 3 to 4 hours, until it is completely set. It depends on the temperature of your kitchen.
2. Gingerbread Cookies: In a medium bowl, combine flour, baking soda, baking powder, ground ginger, ground cinnamon, ground nutmeg, ground clove and sea salt. Set aside.
3. In a large bowl, cream together butter and sugar for 3 to 4 minutes or until light and fluffy. Scrap the sides. Place your molasses into a glass of warm water for a 1 or 2 minutes.
4. Add in eggs one at a time, mix until well incorporated. Add vanilla extract. Add in warmed molasses and mix well. Scrap sides.
5. Slowly add in flour mixture a cup or so at a time. Once all of the flour is gone cover and chill for 1 1/2 hour to 2 hours. It depends on how soft your butter is.
6. Preheat oven to 350 degrees. Scoop out a round two tablespoons worth of dough and roll into the course sugar. 
7. Bake cookies for 11 to 13 minutes or until golden brown. They will have a crisp edge, set on top but soft in the middle. Let the cookies cool for 5 minutes on the pan and transfer to wired rack to cool completely.
8. Scoop filling or pipe onto one side of the cookies then sandwich another cookie on top. Store in a cool place.

  9. Oh my gosh these look yummy and I'm pretty sure I can make a vegan version given your recipe. My husband isn't crazy keen on chocolate, so would you be able to recommend another flavour that would go so well in these cookies for me please?
