A somewhat copycat recipe of my favorite thing to get from a chain restaurant, Cajun Chicken Sheet Pan Quesadilla.
This quesadilla has Cajun seasoned chicken with bacon, Cheddar Cheese and Monterey Jack cheese baked in the oven to give it a crispy outside.
The different between the quesadilla you can get from the chain restaurant and this one is that you baked this on a sheet pan so you can make this for your whole family.
Normally quesadillas you make in a skillet pan or on a griddle. Making it for the whole family can take a long time.
I saw a similar sheet pan quesadilla that used ground beef. My family and I do not eat ground meat so I want to change it up.

Cajun Chicken Sheet Pan Quesadilla
Time:Prep- 30 to 40 minutes
Baking- 30 to 35 minutes
Cooling- 5 minutes
Ingredients
1/2 lb Chicken Breast, 2 to 4 pieces
3 Tablespoons Cajun/Creole Seasoning Mix, divided
1 Tablespoon Granulated Cane Sugar
1 Tablespoon Smoked Paprika
1 teaspoon Ground Black Pepper
6 stripes Uncured Bacon, cooked and cooled
2 cup Sharp Cheddar Cheese
1 cup Monterey Jack Cheese
8 to 10 Burrito- Size Flour Tortillas
Sour Cream, for dipping
Taco Sauce, for dipping
1. Preheat oven to 400 degrees. In a small bowl, combine Cajun/Creole seasoning mix, sugar and smoke paprika.
2. Cover a small pan with a piece of aluminum foil and parchment ontop. Place chicken onto prepared pan and sprinkle 2 1/2 Tablespoons worth of Cajun Spice mix. Evenly coating both sides then sprinkle ground black pepper. Let that sit for 10 to 15 minutes.
3. Cook chicken 30 to 40 minutes or until chicken is fully cooked. Let that cool slightly before shredding.
4. Cook bacon and drain. Let cool for 10 minutes. Shred cooked chicken and crumble bacon.
5. Assemble: Lower the heat of the oven to 350 degrees. Layout tortillas, overlapping each other. Sprinkle half of sharp cheddar cheese and half of the monterey jack cheese. Sprinkle shredded chicken then bacon and the rest of the cheese. Sprinkle on a little more of the Cajun/Creole seasoning mix. Cover the top, overlapping. Place another sheet pan on top.
6. Bake in the oven for 20 to 25 minutes covered then remove pan and bake for another 10 minutes or until golden brown.
7. Flip quesadilla onto a cutting board or onto another sheet pan. Let sit for 5 minutes before cutting. Sprinkle the rest of the Cajun/Creole seasoning on top, optional. Serve with sour cream and/or taco sauce. If not consuming right away, let cool completely before refrigerating or freezing.

This looks really tasty and super easy to take as a packed lunch. I've never seen 'square' quesadillas - normally, when we make something we put all the food on one half and then fold the tortilla in half so it's a crescent shape.

ReplyDeleteThis is so interesting! I'm totally Pinning it for later. I have a question, though, sort of not about the recipe: Why doesn't your family eat ground meat? Not criticizing, it's just something I've never even considered, though I don't know why. I seldom eat beef because...ugh. If you're not comfortable divulging the reason, that's fine! I'm just genuinely curious! :)

DeleteQuesadillas were one of our favorite things to have for lunch growing up! We always made them in a frying pan. I wouldn't have thought to bake them on a sheet pan!
