Sweet Potato Pancake Muffins



 A southern classic in a pancake muffin hybrid. These are filled with mashed sweet potatoes, cinnamon, and ginger.
I was looking at my calendar the other day and saw that Halloween isn't that far away. Only about 100 odd days away.
Meaning it is time to start making posting that give your insides a hug. That is how I feel when I eat the typical holiday spread.
 

With these  pancake muffins  you will not need to add extra syrup because of sweet potato.
If you ask me what is a pancake muffin, well it is a portable version of a pancake.
I've been make them for my niece and nephews this summer because I have been watching them and they love them.

Sweet Potato Pancake Muffins 

Time:
Prep- 15 minutes
Baking- 20 to 23 minutes

Ingredients

3 cups Unbleached All Purpose Flour, sifted
1/2 cup Unsalted Butter, melted and cooled
1 1/4 cup Mashed Sweet Potato, drained 
1/2 cup Dark Brown Sugar or Granulated Cane Sugar
4 egg yolks
4 egg whites, lightly beaten
2 1/2 cups Buttermilk
2 teaspoons Ground Cinnamon
1 teaspoon Ground Nutmeg
1 1/2 teaspoons Ground Ginger
1 teaspoon Fine Sea Salt
2 teaspoons Pure Vanilla Extract
1 1/2 teaspoon Baking Powder
1 teaspoon Baking Soda

1. In a medium size bowl, sift together flour, cinnamon, nutmeg, ginger, fine sea salt, baking soda and baking powder. Set aside.
2. In two small bowls, separate the egg yolks and egg whites. Set aside.
3. Beat together egg yolks, butter, sweet potatoes, sugar and vanilla until well incorporated.
4. Add in flour mixture to the butter-sugar mixture. Fold until flour is incorporated, lumps are okay. Fold in lightly beaten egg whites until well incorporated. Still lumps are okay.
5. Cover mixture and let sit for at least 15 to 20 minutes. It may rise a little.
6. Preheat oven to 325 degrees and grease two to three muffin pans. Fill muffin cups 3/4 full in a ziptop bag or ice cream scoop. Bake for 15 to 20 minutes or until a toothpick comes clean. They will be bouncy.
7. Let them cool for about 5 to 10 minutes before taking them out of the muffin pan. Enjoy!

If storing them, let them cool completely and microwave them for 30 seconds to 1 minute when heating them up.

  10. Sweet potato pancake muffins is something I didn't even know existed and I absolutely love the sound of it! I love sweet potato, the flavour and fragrance of cinnamon will only make it better. Baking is a new found hobby for me and it seems I've stumbled upon a really unique recipe to try, thanks!
