Cookies and Cream Granola Bars



Easy, no-bake granola bars full of oats and sweetness with one of the best cookies ever. Oreos. 
The warm Spring/Summer months are here so I do not want to heat up my kitchen as much as I can. 
The only thing you need is a saucepot, spoon and large pan.
Since grocery stores do have limited supplies these are perfect to make.  The bars only have six ingredients.
Also these are not full of junk like the one that you may find at the store. 
These granola bars do not have a lot of ingredients so these should be find anywhere. 
You just need quick oats, rice cereal, a little of butter, honey or anytime of syrup, sugar and of course Oreo cookies.

No-Bake Cookies and Cream Granola Bars 

Time:
Prep- 5 to 10 minutes
Chilling- 1 to 2 hours

Ingredients

4 cups Quick Oats
2 1/2 cups Puff Rice Cereal
1/2 cup Unsalted Butter
1 cup Dark Brown Sugar, can use light
3/4 cup Honey, can use maple syrup or agave
1 teaspoon Pure Vanilla Extract
1/2 teaspoon Fine Sea Salt
1/2 cup Mini Chocolate Chips
1 package Chocolate Sandwich Cookies, roughly crushed

1. Fold together quick oats and puff rice cereal in a large bowl.  Cover 9 by 13 or 15 by 17 pan with parchment paper.
2. In a medium size sauce pot, melt butter, brown sugar, vanilla, salt and honey or syrup. Bring to a slight boil for only 2 minutes then pour over the oat-cereal mixture.
3. Gently fold until oat-cereal are slightly coated then add in 3/4 of the crushed chocolate sandwich cookies. Fold until cookies are well mixed.
4. Transfer to prepared pan. Dampen your finger tips and gently press mixture into the pan. Can use the pan of a measuring cup as well but slightly dampen so it won't stick.
5. Sprinkle over the rest of the crushed cookies and chocolate chips. Gently press into the top.
6. Place pan into the fridge and let set for 1 to 2 hours, depends on the size of your pan. Cut into bars. Keep in the fridge or a cool place.
