This year on this blog I am trying new recipes that I wouldn't have thought in doing. If you have been following me you have notice I like to make this big.
The last couple of post I have done things a little smaller than normal. Like this recipe, instead of a large doughnut you have a little bite.
Since Valentine's Day isn't that far away I wanted to do something that you could make for your potential Valentine because you could put in a box for a gift.
I know that if someone gave me a few of these, they would be mine. Who wouldn't when it comes to chocolate, cream cheese and Oreos.

Cookies and Cream Doughnut Bites
Time:Prep- 15 minutes
Baking- 7 to 9 minutes
Ingredients
Chocolate Doughnut Bites
1 1/2 cups Unbleached All Purpose Flour
1 cup Dark Brown Sugar
6 Tablespoons Unsalted Butter, melted
2 large eggs
3/4 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1 cup Buttermilk
2 teaspoons Pure Vanilla Extract
1/2 teaspoon Fine Sea Salt
Oreo Cream Cheese Glaze
4 oz Cream Cheese
2 teaspoons Unsalted Butter, softened
2 cups Confectioners' Sugar
1 teaspoon Vanilla Bean Paste or Vanilla Extract
4 to 5 Tablespoons Milk
1 cup Oreo Cookies, lightly crushed
Pinch of Salt
1. Preheat oven to 325 degrees. Grease a 24-cup mini muffin pan. Set aside.
2. In a medium size bowl, whisk together flour, baking powder and salt. Set side. In a larger bowl, beat together cooled melted butter, buttermilk, eggs and vanilla extract.
3. Add flour mixture to the butter mixer. Mix just until the flour is dissolved then gently fold the freeze dried strawberries.
4. Transfer batter to a ziplock bag then pipe batter 3/4 way full.
5. Bake in the oven for 7 to 9 minutes or until a toothpick comes clean. Place on the wired rack and let cool in the pan for 10 minutes then pop out of the pan and let cool completely in the wired rack.
6. While the doughnut holes are cooling beat together cream cheese and butter together for 2 to 3 minutes. Slowly add in confectioners' sugar until thick. Add in milk a tablespoon at a time. Fold in half of the crushed Oreos.
7. Once the doughnut bites are fully cooled dip into the glaze and sprinkle on more crushed cookies. Let set completely for at least 30 minutes to 1 hour, depends the temperature of your kitchen.
