Triple Chocolate Chip Cookies


These are the ultimate chocolate chip cookies with three different kinds of chocolate, browned butter and a touch of cinnamon.
You heard right, three different types of chocolate. I use milk chocolate, semi-sweet chocolate and dark chocolate.
The different types chocolates give you not so sweet chocolate chip cookies if you just used one type. Get a little bitterness from the semi-sweet and depth from the dark.
I've been making this recipe for over 10 years and its taken me that long to perfect this recipe.
The only thing that I have changed with my recipe is the butter. It used to be just softened butter but since I discovered browned butter I've been making them that way.
These cookies will have a gooeyness on the inside and slight crispiness on the outside from all the yummy chocolate.

Triple Chocolate Chip Cookies


Time:
Prep-20 minutes
Chilling- 12 hours
Baking- 10 to 12 minutes

Ingredients

1 1/4 cup Unsalted Butter, browned and cooled
2 2/3 cups Unbleached All Purpose Flour
1 1/2 cups Dark Brown Sugar, packed
2 large eggs
1 1/2 teaspoons Baking Powder
3/4 teaspoon Baking Soda
1 1/2 teaspoons Fine Sea Salt
1 Tablespoon Pure Vanilla Extract
2 cups Semi-Sweet Chocolate Chips
1 1/2 cups Milk Chocolate Chips
1/2 cup Dark Chocolate Chips
Ground Cinnamon, to taste 

1. In a medium sauce pan, brown and cool butter for 7 to 9 minutes or until it is golden brown and nutty and fragrance.  Remove from heat and let cool for 20 minutes then pour through a fine mesh strainer and/or cheesecloth into a bowl. Let is solidify, it may take up to an hour.
2. In a medium bowl, whisk together flour, cinnamon, baking soda and baking powder. Set aside.
3. In a large bowl, cream together brown sugar and browned butter until light, 3 to 4 minutes. Add in vanilla extract, fine sea salt and eggs one at a time. Beat until eggs are well incorporated.
4. Slowly add in flour a cup at a time. Add in a chocolate chips and last of the flour then fold until evenly distributed.
5. Cover and chill for at least 3 hours but recommend 12 to 24 hours. The longer than sit the better the cookies.
6. Preheat oven to 350 degrees and line two to three cookie sheets with parchment paper. Scoop cookie dough out with a cookie scoop or ice cream scoop, depending on the size of cookie you would like.
7. Bake in the oven for 10 to 12 minutes for smaller, 13 to 15 minutes larger, or until lightly golden brown. Rotate pan halfway through.
8. Let the cookies cool for 15 minutes on the cookie sheet then transfer to wired rack to cool complete.

Note: To freeze the cookie dough, chill the cookie dough as recommended then scoop and place in a freezer ziplock bag or cookie sheet wrapped tight. To bake you may have to do it for 13 minutes for the small and 17 minutes for the larger
