Birthday Cake Sugar Cookies





Your favorite cake during your special time of the year, your birthday,in cookie form. Giant, chewy rainbow sprinkle cookies with yellow cake mix to give you the authentic flavor.
My nephew's 12th birthday is coming up and he asked me to make his birthday cake or treat. What's better than birthday cake flavor cookies.
Anything can be called birthday cake but what has become popular is a vanilla or yellow cake with rainbow colored sprinkles and buttercream.
Some of the birthday cake stuff can be really tasty. They're a lot that just tasty like pure sugar and you don't even get any flavors.
I'm making these cookies with a little yellow cake mix,as I stated above, to give it more of the traditional birthday cake taste.
If you don't have a spare box in your pantry you don't have to add it but it give you the full flavor of the birthday cake.

Birthday Cake Sugar Cookies

Time:
Prep- 20 minutes
Baking- 12 to 15 minutes
Chilling- 2 to 3 hours


Ingredients

2 cups Unbleached All Purpose Flour
1 cup Yellow Cake Mix
1 cup Unsalted Butter*, softened
1 1/2 cups Granulated Cane Sugar
1/4 Tablespoons Dark Brown Sugar
2 Tablespoons Sour Cream
2 large eggs
2 teaspoons Baking Powder
1 1/2 teaspoon Fine Sea Salt
1 Tablespoon Pure Vanilla Extract
1/4 teaspoon Pure Almond Extract, optional
3/4 cup Rainbow Sprinkles

*can use vegan butter

1. In a medium bowl, combine flour, yellow cake mix, baking powder and salt.
2. In a large bowl, cream together softened butter, granulate sugar, and brown sugar for 3 to 5 minutes or until light and fluffy.
3. Scrap the sides of your bowl, add in eggs one at time, vanilla extract, almond extract and sour cream. Beat until incorporated.
4. Add in flour mixture a 1/3 at a time. Mix to just incorporated. The last 1/3 fold in with the sprinkles.
5. Cover and chill in the fridge for 2 to 3 hours, can place in the freezer for 1 hour.
6. Preheat oven to 325 degrees and cover 2 to 3 cookie sheets with parchment paper. Scoop out with a cookie scoop or a medium size ice cream scoop. Gently roll then flatten into a disk. Chill for 10 to 15 minutes.
7. Bake for 12 to 15 minutes or until lightly golden brown edges. Let the cookies cookie on the sheet pan for 10 minutes then let cool completely on a wired rack. Store in an airtight container.

  3. Loving this recipe! I've always liked cookies to be a certain thickness and texture. These look right up my alley! Bonus points that these don't contain any chocolate because I'm just not a fan!

  6. I like the idea of adding the yellow cake mix. As you said, most birthday cake cookies like this taste like pure sugar. I'd rather have the cake taste too!
