Strawberry Lemonade Scones





Sweet and sour, flaky, buttery scones with a lot of lemon zest, lemon juice and freeze dried strawberries drizzled with a strawberry glaze.


I have no clue why this combination works but it does. It maybe that strawberries cut down on the tartness.
These scones are perfect for this time of the year because it is so hot. Today alone was in the mid 90's and it felt like 100.
The scones will refresh and cool you done on a hot day because it takes just like the liquid form of strawberry lemonade.

Plus this summer I have been watching my niece and nephews and they love anything that I've made with strawberries or lemon or both.

That is why these should be a kids favorite and they have a freeze dried strawberry, like an astronauts would eat.

Strawberry Lemonade Scones


Time:
Prep- 20 minutes
Baking- 13 to 17 minutes
Chilling- 1 to 2 hours

Ingredients

Strawberry Lemon Scones
3 cups Unbleached All Purpose Flour plus a little for rolling
1 1/4 cup Granulated Cane Sugar
3/4 cup Unsalted Butter, frozen and cubed
2 Tablespoons Lemon Zest, 3 to 4 Lemons
1/4 cup Lemon Juice, 2 to 3 Lemons
1/2 to 2/3 cup Milk, can use milk alternative
1 large egg
1 Tablespoon Baking Powder
1 1/2 teaspoons Fine Sea Salt
2 teaspoons Pure Vanilla Extract
1/2 cup Freeze Dried Strawberries, roughly chopped

Strawberry Glaze
2 cups Confectioners' Sugar
1/4 cup Freeze Dried Strawberries, crushed
1/4 cup Milk or Lemon Juice
pinch of salt

1. Zest lemons into granulated sugar and let it sit for 30 minutes, better flavor.
2. In a medium bowl, whisk together flour, baking powder, salt.   Add butter and sugar to the flour mixture. Gently rub butter into the flour until small pea shapes.
3. Add lemon juice and vanilla extract. Toss together. Whisk together egg and milk and slowly incorporate milk into the flour mixture until just together. Flour in freeze dried strawberries.
4. Tip mixture onto a floured surface and gently knead until it forms a ball. Flattened to a small disk and chill for at least 1 to  1 1/2 hours.
5. Preheat oven to 350 degrees. Line 1 to 2 pans with parchment. Gently roll out scones to 1/2 inch thick and cut out using a knife or cookie cutter.  Chill in the fridge for up to 30 minutes until almost solid.
6. Bake in the oven for 12 to 15 minutes or until lightly golden brown. Remove from the oven and let cool on the pan for 10 minutes then transfer to a wired rack to cool completely.
7. Whisk together confectioners' sugar, strawberries, milk or lemon juice and salt. Drizzle or dip cooled scones and let set for 30 minutes to 1 hour. Enjoy!

  8. These look delicious! And also easy to make some tweaks to, depending on dietary choices. For me, personally, I would do whole wheat flour, coconut sugar, ghee instead of butter, and almond milk. I'm definitely going to try these and let you know how they come out :)
